Recipe: Vegan Chia pudding with the orange-pistachio cream

Vůně pomerančů mě ve Španělsku provází skoro na každém kroku, a tak jsem pochopitelně chtěla udělat v neděli dezert z čerstvě natrhaných plodů a použila k tomu všechno, co jsem našla doma. Výsledek byl perfektní a všechny suroviny byly naladěné na stejnou vlnu. Okuste trochu pomerančového vánku i u Vás doma. Navíc zdravě a bez cukru!

There is a delicious smell of fresh oranges in Spain at every step. Therefore, I decide to make a homemade dessert this Sunday from the tasty raw fruit and include some healthy ingredients that I typically found at my home. The result was excellent and all ingredients were on the same note. You can enjoy the orange breeze at your place too! Above that it should be healthy and without sugar.

Volně natrhané pomeranče mají trochu odlišnou chuť než ty kupované. Přirovnala bych je spíše ke grepu, a tak jsem výsledný krém trochu dosladila. Pokud ho však budete připravovat z klasických “sladkých” pomerančů, myslím, že se bez slazení úplně obejdete.

Free cut oranges naturally have a little bit different tasting than all citruses from the modern supermarket. I can associate them with the grapefruit, so I made the cream a little bit sweeter because of it. But if you make it from classic oranges, you don’t need to add extra sweetener.

Suroviny na 1 porci: / Ingredients for 1 portion:

100 ml rostlinného mléka (já použila kupované rýže a kokos), ale můžete použít mandlové, ovesné, kokosové apod. nebo si je klidně můžete jednoduše připravit sami doma

100ml of the plant-based milk (I used the rice + coconut from the store) but you can use almond, oat, coconut, etc. or you can make it easy at your home too

5 lžiček chia semínek / 5 spoons of the Chia seeds

citrónová šťáva / lemon juice

cca 1 lžičku zdravého sladidla (cukr z kokosových květů apod., pro neveganskou verzi může být i med)

approximately 1 spoon of the healthy sweetener (coconut sugar etc., for no vegan version you can use honey)

1 velký pomeranč nebo 2 menší / 1 bigger orange or 2 smaller

hrst pistácií / a handful of pistachios

pistácie a pomerančová kůra z bio pomeranče na ozdobu / pistachios and orange peel from organic orange for the decorating

Postup: / Instructions:

Prvně si dopředu připravíme chia pudink a necháme minimálně 4 hodiny zatuhnout, můžete i přes noc. Do sklenic či pohárů nalijte 100 ml mléka, přidejte chia semínka, citrónovou šťávu a půl lžičky sladidla. Dobře promíchejte a nechte zatuhnout.

First, go ahead with chia pudding and let it chill for at least 4 hours to set it. (You can let it chill all-night too.) Pour milk to the decorative glasses and add chia seeds, lemon juice and half of the spoon of the sweetener. Mix it and let it rest.

Na krém rozmixujte celý oloupaný pomeranč a přidejte hrst vyloupaných pistácií. Vyklopte do malého hrnce a přidejte sladidlo dle chuti. Na mírném plameni nechte pobublávat pár minut a dobře míchejte, aby lehce zatuhnul. Odstavte a nechte vychladnout.

What about the cream? Mix the whole peeled orange in the blender and then add a handful of pistachios. Put into the small pot and add sweetener according to your taste. Let the cream bubble a few minutes on the small flame and mix it well – that makes cream more firm. Get off the flame and allow it to cool.

Připravený krém navrstvěte na zatuhlý chia pudink a dozdobte pomerančovou kůrou a drcenými pistáciemi.

Prepared cream plate to the finished chia pudding and decorate with the orange peel and crushed pistachios.
